Ren’s Favourite Raspberry & White Chocolate Waffle Pudding

Another kids favourite because it’s so easy and soooooo delicious!

The first time I made this recipe I found it surprisingly easy to make and a lot of fun, when making the dessert with my friends help which made it more fun and easier. The best part about making this dessert is if you make a mistake it doesn’t really matter because it’s a messy dish anyway. Also when you sprinkle on the chocolate you can snatch a piece for yourself.

The first time I ate the raspberry and white chocolate waffle pudding was at a family friends house. I found it so delicious that I wanted to have it every night but that’s not so healthy so I wasn’t allowed to. Once it is done it is best served with ice cream and since we didn’t have any we had to buy some and that did not end well because we ended up bringing home a 4-litre tub of Neapolitan ice cream (which is strawberry, vanilla and chocolate flavoured) which was good for us but the parents weren’t too happy.

Who connected us?! Renee, our lovely South African friend introduced us to one of her favourite desserts. Great dish, prepared in advance when you have friends over.

Makes: 8 portions | Preparation: 10 min | Oven time: 35 minutes

Ingredients:

  • 240g (about 4) Belgian wafflesIMG_20190712_172634
  • 150g raspberries (fresh is best, but frozen are fine)
  • 100g good-quality white chocolate, chopped
  • 1/8 cup caster sugar
  • 1/2 tbsp plain flour
  • 2 eggs
  • 2 cups pouring cream
  • 1 tsp grated lemon rind
  • 1/2 tsp vanilla extract
  • 250 tbsp icing sugar, to dust
  • ice cream or cream to serve 

How to make

– Preheat the oven to 170°C. 

– Butter a small ovenproof dish. 

– Cut the waffles into 2cm cubes. 

– Place half the waffle cubes in the dish, topped by half the raspberries, then half the chocolate. 

– Repeat layers. 

– Whisk together sugar, flour, eggs, lemon rind, vanilla and cream. 

– Pour the cream mixture over waffles and set aside for 10 minutes. 

– Bake in the oven for 35 minutes or until golden. 

– Dust with icing sugar. 

– Serve with cream or ice-cream.

Notes:

How many portions: I reckon that this recipe is enough for 8 people especially when you also add ice cream. If you make the dish for a bigger group, as a rule of thumb use half a waffle per person, you can do the maths.
